Sodium nitrite (NaNO2), commonly known as nitrite, is an inorganic salt formed by the ionization and formation of nitrite ions with sodium. Sodium nitrite is easily deliquescent and soluble in water and liquid ammonia. Its aqueous solution is alkaline with a pH of about 9 and is slightly soluble in organic solvents such as ethanol, methanol, and ether. Due to its salty taste and low price, it is often used as an unreasonable substitute for table salt in illegal food production. Sodium nitrite is toxic, and food containing industrial salt is highly harmful to human health and carcinogenic. Sodium nitrite reacts with oxygen to produce sodium nitrate when exposed to air. If heated above 320 ℃, it decomposes and produces oxygen, nitrogen oxides, and sodium oxide. Contact with organic matter is prone to combustion and explosion.
Sodium nitrite is an industrial salt, which is a white opaque crystal with a shape similar to table salt. Nitrite is harmful to the human body, as it can oxidize low iron hemoglobin in the blood into high iron hemoglobin, losing the ability to transport oxygen and causing tissue hypoxia damage. Nitrite is not only a carcinogenic substance, but ingestion of 0.2-0.5g can cause food poisoning, and 3g can be fatal. Nitrite is a type of food additive that has coloring and preservative effects, and is widely used in animal based foods such as cooked meat, sausages, and canned food.
